Since Mother’s Day is coming up soon, you are probably looking for some great ideas for breakfast in bed! Don’t worry, I have the best pancake recipe for you to impress your mother with. Also this will prove to her you can, in fact, provide for yourself, just don’t let her see that you had to go buy every ingredient because you only keep wine in the fridge.
I feel like I should make a disclaimer on this post; I’m actually really terrible at making pancakes. I wish I was even kind of kidding, but I just can’t make them that well. I dominate on the waffle side of the spectrum. But pancakes have always been my weakness. So if I can make these, you know they have to be pretty easy.
Ricotta Pancakes
1 1/4 cup flour
3/4 cup ricotta cheese
1 cup milk
1 tsp baking powder
4 eggs – separated
1 pinch of salt
3 tbsp butter
First things first, go ahead and separate your eggs. Whites in one bowl, yolks in another. You need both, just not together.
As you can see, I’m 3/4 of the way to being good at this whole separating my eggs thing.
Whip your egg whites into a frenzy until they form stiff peaks. You can use a mixer for this or use a whisk.
Next you’ll want to sift your flour, salt, and baking powder into a bowl. Because sifted flour is better. Then mix in your egg yolks and milk.
Once you’ve got that batter all mixed up, you’ll start to add in your egg whites by gently folding them in.

Don’t just plop them in there like you didn’t take the time to make them the glorious, fluffy creation they are.
This is going to help your pancakes get fluffy.
Turn your griddle on and set it to medium-high heat. I like to use this countertop griddle/grill/waffle maker I got at Williams-Sonoma. Because I live in an apartment and don’t have a grill and needed a waffle maker and my life/job are all about efficiencies.
Once your griddle is hot, throw on some butter so your pancakes don’t stick. Then pour on your batter. Obviously this is not a science, make them as big or small as you want.
Let them cook on one side until they start to get air bubbles. That’s how you know they are ready to flip. You’re going to think they are cooking for a while but they will be fine.
Once your pancakes are all done, put them on a fancy plate and throw some fruit on there to make Mom really think you know what you’re doing.
Don’t forget syrup! It’s best served from hedgehogs.
Maybe get her some flowers too. She’s your mom after all, she deserves it.
Don’t forget to use your dog as a lookout to make sure she isn’t awake and going to barge in on your one chance to look good.
