Zoodles & Salmon

I want to start by saying thank you all so much for the kind words about last week’s Whole30 post. It means so much to read all your e-mails and Instagram & Facebook comments! I got lots of questions about what I ate most and for some recipes. I actually felt like Whole30 didn’t change the food I made drastically, it was more about getting rid of eating out. Cooking at home has become a routine now, so it’s getting easier to come up with more recipes.

One of my usual recipes before Whole30 has always been roasted salmon with quinoa and vegetables. Since there are no grains on Whole30 I added more veggies to my usual easy dinner. One of my favorite dishes lately has been zoodles and salmon.

I love zoodles. I use my spirlalizer all the time, like for this recipe. Pro tip, you can use it to make curly fries and curly sweet potato fries. Or if you’re super healthy you can use it for zucchini and carrots and whatever. I have this small, inexpensive one, but would love to have this bigger version when I have more kitchen space.

This recipe is actually super easy to make. I like to make this on weeknights when I get home from work and am feeling kind of lazy. If I’m being honest, if I’m feeling super lazy I just slice some zucchini and roast it with the salmon. So this is like medium level lazy dinner, but still feel like a fancy adult.

Here’s everything you’ll need:

1 large zucchini

1 salmon filet – I buy frozen salmon at Target from their Simply Balanced brand

3-ish tbsp Extra Virgin Olive Oil – Whole30 uses EVOO or coconut oil and the smell of cooking coconut oil makes me want to gag and then burn all my belongings and start over in a new city, so EVOO it is

1 clove garlic, minced

1 lemon

Salt + Pepper

First things first, set your oven to 425 degrees. This is my standard roasting temperature for just about everything. Coat your salmon filet in olive oil and sprinkle with salt. Slice your lemon and add a few slices to your salmon. Pop it in the oven to roast for 20 minutes.

While your salmon is cooking, use your spiralizer to make your zoodles. Heat some olive oil in a pan over medium high heat. When the oil is heated, add the garlic and cook for 1-2 minutes, until it smells delicious. Then add your zoodles to the pan and squeeze some lemon juice over them. Cook for a few minutes until the zoodles are tender.

Add them to your plate, take your salmon out and top your zoodles. I like to top with a little more lemon juice for flavor.

And in half an hour you have a delicious, healthy meal. Feel free to use this to impress people with your crazy cooking skills, I won’t tell how easy it was.
