Zucchini Fries

One of my favorite vegetables is zucchini, in case you didn’t get that from my obsession over zoodles. An awesome and quick way to make zucchini is to make ‘zucchini fries’. Except they’re baked, not fried! And topped with cheese…

So they aren’t super healthy, but they aren’t super terrible either.

Here’s everything you’ll need to make these and a few modifications you can make.

2 medium zucchinis

1 cup parmesan cheese

1 cup milk (I used non-fat)

pinch of salt + pepper

note: you can also add bread crumbs to make them crispier, I only used cheese because I wanted them purely cheesy

Lemon Garlic Dipping Sauce

1/4 cup mayo

1/4 tsp minced garlic

1 tbsp lemon juice

chopped parsley

Start by making your dipping sauce. It needs to be refrigerated a little before you eat it.

Just mix your mayo, garlic, and lemon juice together in a bowl. Then add in your chopped parsley, however much you like.

Pop it in the refrigerator for about 30 minutes.

To start your zucchini, preheat your oven to 350.

The easiest way to slice your ‘fries’ is to cut your zucchini in half length-wise, then cut them in thirds.

Pour your milk in one bowl. Mix together your parmesan and salt & pepper in another bowl.

Use some parchment paper to line your baking sheet to make clean up easier.

Now dip your slices in the milk, followed by a dip in the cheese mixture.

Next, bake them in the oven for about 10-15 minutes, until the cheese gets all melty and delicious, but the zucchini is tender.

They should come out all perfectly baked and cheesy.

Now just toss them on a plate or a fry cup and get ready to enjoy them with their perfect dip.
